Taylor Family Favourite Curried Sausages & Steamed Rice

A favourite family recipe is no small thing, and the Taylor family is no exception. Their beloved curried sausages with steamed rice is a dish that has stood the test of time, warming hearts and filling bellies for generations. The secret to this delectable meal lies in the careful selection of fragrant spices and juicy sausages, which combine perfectly with fluffy steamed rice to create a comfort food that is both satisfying and nutritious. With each succulent bite, it’s easy to see why the Taylors hold this dish dear to their hearts.

Ingredients

  • 8 Sausages
  • 1 onion diced
  • 2 carrots peeled and diced
  • 1 bunch broccolini
  • Big handful of snow peas
  • 2 tins of evaporated milk
  • 2 tsp curry powder
  • 2 tsp smoked paprika
  • 2 tsp turmeric
  • 2 tbs brown sugar
  • 1 tbs cornflour
  • 1 tbs cold tap water
  • 1 cup uncooked rice

Method

In a frying pan, cook the sausages until just done, slice and set aside. Discard any oil from the pan.

In the same pan, add the onion and carrot and cook until onion is transparent.

Now add all spices and sugar and fry for 2 minutes. Add evaporated milk and sausage pieces and stir.

Now add the zucchini and snow peas and simmer until all vegetables are cooked. Bring curry up to a boil, then add the cornflour & water roux and stir while it thickens. Turn off heat.

Cook rice as per packet directions.
