Tanya’s Snag Surprise with Mashed Potato & Chives

INGREDIENTS

  • 1kg beef sausages
  • 2 large onions sliced
  • 500gm peeled and cubed sweet potato
  • 150gm green beans
  • ¼ cup plain flour
  • 2 tbs Worstershire Sauce
  • ¼ cup Tomato sauce
  • 750ml beef stock
  • 4 potatoes peeled and cubed
  • Warm milk
  • 1 tbs butter
  • Handful of sliced chives

METHOD

Heat a large frying pan to medium heat and brown sausages (don’t cook through) and set aside. When cool, slice into preferred size for your family.

Add the onion to the frypan and cook until soft then add the flour and cook for 2 minutes while stirring. Add the stock, vegetables and stir until combined, now add the sauces and stir, and now add the sliced sausages. Simmer for 20 minutes on low.

Bring a saucepan of water and the potatoes to the boil and cook until tender. Heat some milk in a microwave safe jug. When the potatoes are tender, drain the cooking water and then add the butter and chives to the potatoes with some hot milk and mash, add more milk until you reach the desired consistency.

Serve the sausage casserole with a big scoop of potatoes. Enjoy!
