Peach and Coconut Slice
There is something wonderfully nostalgic about a homemade peach slice. Soft, sweet and topped with a sprinkle of coconut, this simple recipe brings together pantry staples to create a delicious afternoon treat that feels like home. Perfect for lunchboxes, family gatherings or sharing with friends over a cup of tea, this Peach Coconut Slice is easy to make and even easier to love. With juicy peaches folded through a light buttery cake and a pretty pink icing to finish, it is a beautiful reminder that the simplest recipes are often the most treasured.

- 1 cup of self raising flour
- 1 cup of shredded coconut
- ¼ cup sugar
- 1 tsp vanilla extract
- 1 cup diced tinned peaches
- Mix peach juice from tin with milk to make ½ cup of liquid
- 125gm melted margarine or butter
- 2 eggs beaten
Method
Preheat oven to 180°c. Greese & line a slice baking tray.
Drain peaches and save juice (make up ½ cup of combined milk and juice)
Place all dry ingredients into a large bowl and mix together.
Add the juice & milk mixture, eggs, vanilla extract and margarine or butter to the dry ingredients and fold together.
Pour mixture into a greased baking tray and cook for 20-25 minutes.
Allow to cool before icing (icing is optional, as the slice is lovely on it’s own).
Icing
- 1 1/3 cup icing sugar
- 1 tbs butter
- 2tbs boiling water
- 1 drop of pink liquid food colouring
- ½ cup coconut to decorate
Place icing sugar and butter in a bowl, add the boiling water to make a thick paste. Add a drop of food colouring. Spread over the top of the slice, then sprinkle coconut over the icing. Cut into squares to serve.
