Sweet & Sour Curried Beef

  • 2 tsp olive oil
  • 500gm beef mince
  • 1 onion diced
  • 1 carrot diced
  • 1 apple grated & peeled
  • 1 red capsicum diced
  • 1 zucchini diced
  • 50gm pkt chicken noodle soup
  • 400gm crushed pineapple
  • 1tbs curry powder
  • 2tbs vinegar
  • 1tbs brown sugar
  • 3 cups water
  • 1 cup of raw rice + 1.5 cups water


In a frying pan, heat the olive oil & cook the mince & onion.

Add the curry powder and fry off for 2 minutes.

Add the rest of the ingredients and bring to the boil, Simmer for 20 minutes.

Add washed rice to a saucepan and add water.

Bring to the boil, turn heat down to low and cover with lid.

Allow rice to absorb for 10 minutes and then remove from heat.

Fluff rice with a fork and serve with curry.
