Savoury Beef & Veg Bake

Looking for a hearty and delicious meal that the entire family will love? This meal is a definate winner. This flavorful mixture is baked with perfectly cooked macaroni and a generous topping of ooey-gooey melted cheese. The result is an irresistible dish that is sure to please even the pickiest of eaters.

INGREDIENTS

  • 150gm macaroni
  • 1 tbs olive oil
  • 1 brown onion diced
  • 500gm beef mince
  • 2 carrots peeled and diced
  • 1 sachet of French Onion soup
  • 1⁄4 cup tomato sauce
  • 1 cup of fresh or frozen peas
  • 1 cup grated tasty cheese

METHOD

Preheat the oven to 180 ̊c and grease an oven proof baking dish.

Cook macaroni in boiling water until just al dente. Drain and set aside.

In a large frypan, heat oil over medium heat and cook onion for a few minutes until soft. Add beef mince and cook until well browned and any juice has dissipated. Well browned mince = flavour!

Break apart the mince with a wooden spoon and then add carrots and soup mix and stir well. Pour in 2 cups of water and bring to the boil. Reduce heat and simmer for 15 minutes. Stir through tomato sauce, peas and macaroni and mix well.

Pour into the greased baking dish, top with cheese and bake for 15 minutes or until golden and melted.

You can add any vegetables you have on hand to beef up your families vegetable intake.
