Richo’s Cowboy Casserole

We have served Richo’s Cowboy Casserole in hollowed out freshly baked dinner rolls, it’s absolutely delicious and adds another interesting element to an already great family dish!

INGREDIENTS

  • 500gm of beef mince
  • 1 brown onion diced
  • 1 cup macaroni pasta
  • 2 x 420gm cans baked beans (salt reduced) 1⁄2 tsp worstershire sauce
  • 1⁄2 tsp ground cumin
  • A pinch of dried oregano
  • 1 heaped tbs tomato paste
  • 1 tsp salt reduced beef stock powder
  • 1 cup grated reduce fat cheddar cheese

METHOD

Preheat oven to 180 ̊c. Bring a pot of water to the boil and cook macaroni as per packet directions.

Meanwhile, heat a medium-sized saucepan, add the mince, and break up while browning and liquid has evaporated. Now add onion and keep stirring until softened.

Mix in baked beans, sauce, spices and tomato paste, then sprinkle in stock powder.

Mix well then add cooked macaroni.

Pour mixture into an ovenproof casserole-type dish and cover with grated cheese.

Heat in oven until cheese is melted and bubbling.
