Raspberry & Apple Slice

As parents, we want to provide our children with the best and healthiest options, but sometimes it can be challenging to come up with creative and tasty ideas. Ashlee’s raspberry and apple slice is not only delicious, but it’s also packed with wholesome ingredients that we can feel good about serving our children. INGREDIENTS

  • ½ cup flour
  • 1 cup of rolled oats
  • ¼ cup coconut oil
  • 1 apple peeled and cut (preboil to soften)
  • ½ cup soy or oat milk
  • Sprinkle of cinnamon

TOPPING

  • 1 cup of raspberries (fresh or frozen and thawed)
  • 2 tbsp of the slice mixture reserved to make a crumble on top

METHOD

Preheat oven to 170′ c fan forced or 180′ c normal bake, then grease a baking dish and line with baking paper.

Add all the slice mix ingredients to a food processor and blend until combined. There should be no large chunks, and it should be fully blended. Spread the mix into the baking dish but reserve 2 tbs of the mixture.

Mash up the raspberries with a fork and then add to the top of the mixture and spread evenly with a spoon to create a top layer that will resemble jam.

Scatter the reserved mix on top, clusters of it work well. Place in the oven and cook for 35-40 minutes.

Allow to cool before lifting the slice including paper out of the dish. Slice up into squares and serve warm or cold.
