Raspberry and Apple Slice

INGREDIENTS

  • ½ cup flour
  • 1 cup of rolled oats
  • ¼ cup coconut oil
  • 1 apple peeled and cut (preboil to soften)
  • ½ cup soy or oat milk
  • Sprinkle of cinnamon

TOPPING

  • 1 cup of raspberries (fresh or frozen and thawed)
  • 2 tbsp of the slice mixture reserved for crumble (optional)

METHOD

Preheat oven to 170′ c fan forced or 180′ c normal bake, then grease a baking dish and line with baking paper.

Add all the slice mix ingredients to a food processor and blend until combined. There should be no large chunks, and it should be fully blended. Spread the ix into the baking dish but reserve 2 tbs of the mixture.

Mash up the raspberries with a fork and then add to the top of the mixture and spread evenly with a spoon to create a top layer that will resemble jam.

Scatter the reserved mixture on top on clusters (optional). Place in the oven and cook for 35-40 minutes.

Allow to cool before lifting the slice including paper out of the dish. Slice up into squares and serve warm or cold.
