Moroccan Beef

Moroccan cuisine is rich in flavor and has a distinct reputation for its use of spices. One dish that exemplifies this perfectly is Moroccan Beef with Paprika Mash. This delightful dish boasts tender chunks of beef seasoned with North African spices like cumin, cinnamon, and turmeric, giving it a tantalizing aroma.  And to top it all off, the beef is served with a bed of creamy, paprika-infused mash potatoes that perfectly compliments the meat’s bold flavors. It’s a dish that’s easy to fall in love with and one that definitely leaves a lasting impression on your taste buds.
You could of course make your own spice blend seasoning, however we use a blend purchased pre made.

INGREDIENTS

  • Oil spray
  • 1 brown onion diced
  • 2 cloves of garlic minced
  • 1 tbs Moroccan Seasoning
  • 500gm beef diced or minced
  • 1 x 400gm can of chickpeas drained
  • 1 tbs tomato paste
  • 2 cups of frozen mixed vegetables
  • ¼ cup diced apricots
  • 1 can of crushed tomatoes
  • 500ml of liquid stock
  • 500gm Sweet Potato peeled and cubed
  • 1 garlic clove peeled
  • ½ tsp Smoked Paprika

METHOD

Spray the pot and heat over medium-high heat and brown beef and onions together.

Once browned, sprinkle over the Moroccan seasoning and stir. Add the tomato paste and cook stirring for 2 minutes, now add the apricots, mixed veg, tomatoes and stock. Bring to a boil, reduce heat to low, cover and cook until vegetables are cooked through.

Add the drained chickpeas and stir through.

If the sauce is too wet, bring to the boil and thicken using combined cornflour and cold tap water mixed. (1tbs cornflour to 2 tbs water)

Meanwhile add sweet potato and whole peeled garlic clove to a pot of water and bring to the boil. When cooked through, drain and mash potato and garlic then season with paprika. Mix to combine.

Serve Moroccan Beef with Paprika Mash, and some fresh herbs of your choice for garnish. If you want to add an authentic touch, you can garnish with slithered almonds and pomegranite seads!
