Kumara & Banana Slice (GF)

Ingredients

  • 400gm peeled and cooked kumara (1 large sweet potato)
  • 220gm ripe banana or 2 small bananas
  • 2 eggs
  • ¼ cup coconut oil or vegetable oil
  • 1 cup of ground almonds or 1 cup of almond flour or plain flour
  • 1 tsp cinnamon
  • 1.5 tsp baking powder

Note: You can add some extra sweetness with a tbs of maple syrup, but the bananas and kumara are quite sweet naturally.

Method

Grease a slice tray or a muffin tin with spray oil. Preheat oven to 180˚c

In a large bowl mash, the kumara and banana then add the eggs and oil and mix well. You can use a whisk at this stage.

Add the dry ingredients, mix with a large spoon.

Pour into the tray or muffin tin.

Bake at 180˚c for 20-25 minutes in a tray –  check after 15 minutes if making muffins.
