Healthy Peach Cakes
It’s not often that we come across a recipe that’s both scrumptious and healthy, but Phyllis Leung’s Peach Cake recipe is just that. Her Peach Cake recipe is a perfect balance of natural sweetness from the peaches and wholesome ingredients that make it stand out from your typical dessert.
INGREDIENTS
- 1 can of peaches drained
- 2 medium apples grated
- 2 eggs beaten lightly
- 60ml milk
- 2 tbs honey
- 240gm almond meal or 1 cup plain flour
- ½ tsp cinnamon
- 2 tsp baking powder
METHOD
Preheat oven to 170 • c fan forced or 180 • c normal bake, then grease a muffin pan with oil spray.
Place apple, eggs, honey, flour and baking powder in a large bowl and mix until just combined.
Spoon mixture into holes, then push a slice of peach into batter of each cake.
Bake for 25-30 minutes.
