Dublin Coddle (Irish Stew)

Ingredients

  • 4 rashers of bacon diced
  • 2 large onions diced
  • 6 medium potatoes peeled and cubed
  • 500gm pork sausages
  • 2 cups of liquid stock
  • ¼ cup parsley chopped
  • 2 celery stalks diced
  • 2 carrots peeled and diced
  • 1 medium green apple, peeled and diced

Method

Sauté onion, celery and bacon until browned.
Add apple and sauté
Chop sausage into pieces and fry off.
Add all other ingredients to pot and cook on medium heat for 20 minutes.
Add parsley just before serving.
