- ½ cup of white rice
- 1 can of Coconut milk plus enough water to make up to 1 litre.
- ½ cup of sugar
- 1 tsp vanilla
- Pinch of cinnamon
Combine rice, milk, water and sugar in a saucepan and bring to a boil.
Reduce heat and simmer for 20 minutes stirring occasionally.
Remove from heat and add vanilla and cinnamon.
Serve warm or chilled.
