Dairy Free Rice Pudding
Indulging in a sweet treat can be tricky when you have dietary restrictions, but that’s where dairy-free rice pudding comes in as a delicious solution. Creamy and comforting, this dessert is made with plant-based coconut milk, and is still packed with texture thanks to the chewy rice grains. It’s perfect for a cozy night in, as an after-school snack, or even as a holiday dessert option. Best of all, it’s easy to customize with your favorite toppings, such as fresh fruit or a sprinkle of cinnamon.
Ingredients
- ½ cup of white rice
- 1 can of Coconut milk plus enough water to make up to 1 litre.
- ½ cup of sugar
- 1 tsp vanilla
- Pinch of cinnamon
Method
Combine rice, coconut milk, water and sugar in a saucepan and bring to a boil.
Reduce heat and simmer for 20 minutes stirring occasionally.
Remove from heat and add vanilla and cinnamon.
Serve warm or chilled.
