Dairy Free Rice Pudding

Ingredients

  • ½ cup of white rice
  • 1 can of Coconut milk plus enough water to make up to 1 litre.
  • ½ cup of sugar
  • 1 tsp vanilla
  • Pinch of cinnamon

Method

Combine rice, milk, water and sugar in a saucepan and bring to a boil.
Reduce heat and simmer for 20 minutes stirring occasionally.
Remove from heat and add vanilla and cinnamon.
Serve warm or chilled.
