Beef Korma with Rice

When it comes to feeding children, it’s important to ensure that they get a hearty and nutritious meal that they’ll love. One dish that is sure to be a hit with kids is beef korma with rice. Made with minced beef, this flavorful and aromatic Indian dish is not only easy to make but budget-friendly too. The minced beef makes it easier for little ones to consume and digest, while the mix of spices in the korma adds a depth of flavor that’s sure to satisfy even the pickiest of eaters. Plus, serving it with rice makes it a complete meal that’s both filling and wholesome.

 

 

Ingredients

  • 500gm of beef mince
  • 2 tbs oil
  • 1 brown onion diced
  • 1/3 cup of Korma indian curry paste
  • 400gm canned diced tomatoes
  • ½ cup of water
  • 165ml coconut milk
  • 1 cup of basmati rice (raw and rinsed well under cold water)
  • 1 clove of garlic

Method

Heat 1 tbs oil in a frying pan over medium heat. Add onion and cook for 2-3 minutes or until softened.
Add mince and cook for 4-5 minutes, breaking it up with the back of a wooden spoon until browned and liquid is absorbed.
Stir in curry paste and cook for 1 minute. Pour the tomatoes, coconut milk and water over mince and stir until well combined.
Bring to the boil and simmer for 5 minutes or until sauce has thickened.

Steamed Rice:

Add the rinsed rice to a saucepan and add the remaining oil and clove of garlic
Cover with 2 cups of cold water and bring to the boil.
As soon as it’s bubbling turn the heat down to lowest setting and put the lid on.
Cook for 8-10 minutes (don’t open the lid!) and then fluff up with a fork.
Discard garlic before eating.
Serve Curry with rice on the side. Enjoy.
