- 500gm of beef mince
- 2 tbs oil
- 1 brown onion diced
- 1/3 cup of Korma indian curry paste
- 400gm canned diced tomatoes
- ½ cup of water
- 165ml coconut milk
- 1 cup of basmati rice (raw and rinsed well under cold water)
- 1 clove of garlic
Heat 1 tbs oil in a frying pan over medium heat. Add onion and cook for 2-3 minutes or until softened.
Add mince and cook for 4-5 minutes, breaking it up with the back of a wooden spoon until browned.
Stir in curry paste and cook for 1 minute. Pour the tomatoes, coconut milk and water over mince and stir until well combined.
Bring to the boil and simmer for 5 minutes or until sauce has thickened.
Add the clean rice to a saucepan and add the remaining oil and clove of garlic
Cover with 2 cups of cold water and bring to the boil.
As soon as it’s bubbling turn the heat down to lowest setting and put the lid on.
Cook for 8-10 minutes and then fluff up with a fork.
Discard garlic before eating.
Serve Curry and Rice on the side. Enjoy.
