Banana Ice Cream (GF, DF)

There’s nothing like a creamy scoop of ice cream to cure a sweet tooth, but what if you could indulge without the added guilt? Well, thanks to the magic of frozen bananas, now you can! That’s right, with just some frozen bananas and a blender or food processor, you can create a delicious and healthy treat that tastes just like ice cream. This banana “nice” cream is not only a great way to get your fruits in, but it’s also vegan, dairy-free, and gluten-free. Plus, it’s so easy to make that you’ll wonder why you haven’t tried it before. So next time you’re craving something sweet, give this banana ice cream a try!

INGREDIENTS

  • 6 ripe bananas, peeled & frozen
  • Optional: 1/4 cup lemon juice

METHOD

Pop ingredients into a food procesor and process until smooth, scraping down the sides, make sure there are no lumps! This will take a while, it may look crumbly at first but keep going.

You can eat immediately for soft serve.

Pour mixture into a freezer safe container. Freeze for 2 hours until frozen but still scoopable!

If keeping in the freezer for another time, take it out for a few minutes to let it soften to a scoopable consistancy.

TIPS

Healthy Ice Blocks – Pour mixture into ice block makers to make banana pops.

Choc, Peanut, Banana – Add 1/3 cup smooth peanut butter and 2 tablespoons of coca powder when processing.
