Apricot Bliss Balls

Made with fresh apricots and all natural ingredients, these tiny treats are bursting with fruity flavor and good-for-you nutrients. INGREDIENTS
- 1 tablespoon white chia seeds
- 1 cup ripe apricots (about 6 medium apricots, peeled, pitt removed)
- 1 cup traditional rolled oats
- 2 tablespoons honey
- 1 cup desiccated coconut
- 1/4 cup desiccated coconut – for rolling bliss balls in
METHOD
Combine chia seeds and 1/4 cups water in a small bowl and stand stirring occassionally for 10 minutes
Place chia mixture and all other ingredients into a food processor (except coconut for rolling). Process until well combined and a paste forms.
Add remaining 1/4 cup desiccated coconut to a bowl. Roll 1 tablespoon of mixture into a ball and lightly roll in coconut. Repeat with remaining mixture.
Refrigerate for 20 mintues or until firm.
